Delicious Sweet Potato and Chicken Balls (baked and guilt-free)

Im SUPER excited to share with you one of my latest sweet potato recipe obsessions. Sweet potato and chicken balls! 

This recipe is very easy and is packed with nutrients and protein.

Here’s how this recipe came about.  I’ve been making a lot of baked chicken with a baked sweet potato side lunches. It tasted goood but this girl got tired of it. So I decided to get creative and find a different way to eat the same lunch.

Believe me, it tastes different! 

Sweet potato has a lower glycemic index than regular potatos. So it’s a healthier option if you’re trying to lower starches. But you can use regular potatoes if that’s all you have.

Sweet Potato Chicken Balls Recipe

Ingredients

  • 1 baked chicken breast
  • 2 sweet potatos
  • Parsley (about 1/4 cup)
  • Salt and pepper
  • Spinach (optional)
  • Egg whites (optional)
  • Water
  • 1 tsp of olive oil
  • You can add oregano, basil or any other herb you’d like.
